During the summer when squash is plentiful in the garden it is imperative to find new ways to eat it. One of my most favorite ways to cook squash is also the quickest and the most simple. So get the rest of your meal ready, and then prepare this fresh Grilled Squash.
While the grill is heating, wash the squash and cut off the stem ends. I prefer the small young squash, because sometimes the older ones are bitter. You can use zucchini or yellow squash.
Then slice the squash in half lengthwise and place them on a pan or plate. Brush both sides with olive oil. Sprinkle with dried Thyme and a touch of salt.

Flip the squash pieces once they start to turn brown. They are ready to eat when both sides have beautiful grill marks and the squash is soft. This doesn’t take long, maybe about 5 minutes on each side.
Serve HOT!
